Kombucha Tea

What's this?  It's a really huge Kombucha SCOBY.  That doesn't help you any?  Well, you see, Kombucha tea is a fermented drink that is supposed to be good for anything from inflamed joints (arthritis) to yeast infections, and anywhere in between.  It aids in digestion, detoxifies the body, is an effective probiotic, is loaded with vitamins and minerals, and all that good stuff.  I acquired a Kombucha SCOBY from someone in Texas (yes, TX, but they can be gotten from anyone who brews this tea or can be ordered online), and started brewing Kombucha tea back in the winter.  I won't go through the process of brewing it, but it's really easy; about like making a gallon of sweet tea, you just have to wait a few days before you drink it.

What does it taste like?  Well, that varies, depending on how long you let it sit, what kind of tea you used to make it with, and if you put any flavorings in it.  But it tastes pretty much like sparkling apple juice, or apple cider vinegar.  It's a somewhat of an acquired taste.  If it sits for long enough (a month), it may get up to 1.5% alcohol content.  I've gotten kind of lax about brewing and drinking the concoction, and would like to get back at it.  The last batch I brewed for (gasp) over 3 months, so I dumped it out, which is where this GIANT mushroom came from.  The batch I'm working on now has been going for a month, so I'd better drink it and start over or I'll have to dump it out too!  Ok, I've talked myself into it.  I'll make another batch this afternoon. :)

Haha, the first time I ever saw one about 3 years ago, it made me want to gag. But I got over it. Ashlee, you're welcome to try it sometime; I'll give you some when I don't have month old tea. It's more palatable when you only let it brew for a week or two. And I'm always looking to give someone a mushroom (they grow a new one every brew), so you can have your own start!
